What to Cook When You're Not Cooking : Trader Joe's Frozen Isle Must-Haves.

While I'm known for my cooking skills and yummy meals, we all have those days where we can't be bothered to cook. I found this especially true as a college student. Whether I'm in a rush or tired, easy dinners are a part of my weekly routine. While it is not always the healthiest option, I preach that everyone should have an arsenal of "tv dinners" in their fridge at all times - just in case that planned casserole doesn't happen.


Here are my top 10 Trader Joe's Frozen / Refrigerated Meal Must-Haves:


1. Chicken Spring Rolls

Beware: these things are addicting. I eat a whole box in one sitting!


2. Mini Chicken Tacos

Can I down 12-14 mini tacos at once? Yes. Should I? Probably not. Goes great with the Trader Joe's Double Roasted Salsa!


3. Chicken Tikka Masala (refrigerated, not frozen)

This dish is perfect when you're in a true rush. Microwave for 3 minutes and done. These are refrigerated, not frozen, so due dates only extend to 3-7 days after you buy them. One of my favorite lunch items - great to take to work.


4. Chicken Noodle Soup with Veggies / Chicken Soup

I have a soup obsession and these ones are great. When I'm not eating fresh, this is a go-to of mine and it doesn't taste like pure preservatives.


5. Vegetable Samosas

These samosas are delicious. They're definitely not "authentic" tasting, but they're simple, yummy, and a crowd pleaser for parties.


6. Feta Cheese & Caramelized Onion Puff Pastry Bites

I normally only eat these as hors d'oeuvres, but I can finish an entire tray myself. These bites are creamy, rich, and easy to heat up!


7. Gnocchi alla Sorrentina

I truly enjoy this gnocchi and I also feel like it is the embodiment of a college student's dinner. It is delicious, very quick to make, and something you can feel "good" about eating. Mom will approve when sent a picture. Feeds 2 and is always a fan favorite.


8. Spanakopita

If you enjoy "rich" tasting foods, you will love this spanakopita. It is crispy, yummy, and comes in individual serving triangles so it's great to share!


9. Chicken Soup Dumplings

This is another tasty but "I only have 15 minutes to eat something" type of dinner. The dumplings are soft and filled with broth. Always have a box of these on deck - plus they smell amazing.


10. Beef / Chicken & Cheese Tamales

I love tamales, and these are another great "quick dinner", but if you are picky about tamales or only enjoy authentic taste, these aren't for you. I enjoy eating these steamed or microwaved with a spoon-full of my favorite salsa on top.
